Quinoa is quite like couscous in many ways, small and absorbs water and in many ways seen as an alternative to rice. These quinoa recipes for summer are perfect if you are looking for something different to add to the meal plan this week.

Is quinoa healthy?
Did you know that quinoa is a great source of protein and iron amongst other things. It is full of nutrients and a popular addition to many meals. Often classed as a superfood it is something you should try if you haven’t already.
When you are looking for it in the supermarket be sure to ask for it correctly. Whilst it is spelt quinoa which many would assume is pronounced “kwin-oh-ah”, it is actually pronounced “keen-wah”. If it helps, you will usually find quinoa in the same place as dried couscous, lentils etc in the supermarket and at first glance looks quite similar to couscous.

Fruity roast plum, sweet potato and quinoa salad
I absolutely love this roasted plum, sweet potato and quinoa salad recipe. It is fruity and flavoursome whilst also being so unique and really is a favourite of mine that I do not have as often as I should. Having been reminded of it this week in writing this article I am going to add it to next week’s meal plan!
Not only is it a colourful dish but it is great warm or cold in my opinion so you can take it for work the day after enjoying it for your evening meal.

Black bean and quinoa burgers
If you are vegetarian, trying to enjoy more meat free meals or perhaps just fancy a change, these veggie burgers are a great way of using quinoa to make burgers for the summer. That said, they would be great all year, I just think they are better in the summer.
Whether you enjoy them with homemade chips, a salad or on their own they are great for a hot day when you just fancy a burger for your evening meal instead of something too hot and stodgy.

Stuffed peppers
Stuffed peppers are a great summer meal with a big green salad or perhaps some Jersey royal boiled potatoes? Whilst they are not as cool as some summer recipes I still find them a great summer meal idea.
My recipe for garlic, mushroom and quinoa stuffed peppers are really easy to make and can be enjoyed topped with cheese if you like too. I love adding a bit of cheese in the middle and more on top!
