Enter, lentil salad. This nutritious salad with lots of lentils, fruits and vegetables has an abundance of macro and micronutrients. Sharing the recipe on Instagram, Lisa mentioned how she made lentil salad at home while detoxing.
Ingredients for the salad dressing:
2 grated/chopped small cloves of garlic
1/3 cup extra virgin olive oil
1/2 a lemon
4 tablespoons of white vinegar
1 tablespoon of honey
Salt and pepper to taste
Method:
Step 1: Chop one stalk of celery and soak it in the dressing while you boil.
Step 2: Keep one and half cooked cups of brown/puy lentils ready.
Step 3: Add two tablespoons of spring onions to the mix. Chop one small green apple.
Step 4: Add two handfuls of grilled or not grilled sweet and delightful cherry tomatoes to the salad mix.
Step 5: Crumble one and a half blocks of feta cheese for that scrumptious taste.
Step 6: Mix the salad well and let the dressing soak into the lentils for about 20 mins.
