Corn dogs, anyone? That’s a rhetorical question, of course, because who – given the opportunity – would pass up a corn dog? And in this case – Questified Mini Corn Dogs – showcasing delicious and versatile Quest Ranch Tortilla Chips. We’re beginning to think there’s nothing that can’t be done with crushed up Quest Protein Chips. For now, though, we’ll settle for a corn dog with 7g of net carbs.

Yields: 8 servings |  Serving Size: 2 Corn Dogs

Calories: 176  | Protein: 11g  | Fat: 11g | Net Carb: 8g

Total Carb: 8g   | Sugar: 1g

Ingredients

QUESTIFIED MINI CORN DOGS

Ingredients:

  • 1 bag Quest Ranch Tortilla Chips, crushed
  • 1 ¼ cups almond flour
  • ¼ cup cotija cheese
  • ½ tbsp baking powder
  • ⅛ tsp salt
  • 1 ½ cups shredded mozzarella cheese
  • 1 tbsp cream cheese
  • 1 egg
  • 16 cocktail sausages

Method

  1. Preheat the oven to 350 F and prepare a baking pan with parchment paper.
  2. In a mixing bowl, stir together the flour, cotija cheese, baking powder and crushed chips.
  3. In another bowl that’s microwave safe, melt together the mozzarella cheese and cream for 30 seconds and stir smooth.
  4. Whisk in the egg.
  5. Add the mixture to the dry ingredients in the mixing bowl and use a rubber spatula to stir them together until a dough forms.
  6. Separate the dough into 16 evenly sized balls and then press them flat.
  7. Wrap each one around a mini hot dog and then place them on the baking sheet.
  8. Brush the mini corn dogs with an egg wash (egg and 2 tbsp of water whisked together) and bake for 13-16 minutes and golden brown.
  9. Serve with condiments.
